Obligatory Snow Day Post

Purdue cancelled classes today. This is so exciting. I'm really glad that I decided not to study for that French quiz I was supposed to have this morning. It was probably a premonition of sorts. Anyway Husband still had to go into work (sad) and our apartment is quite boring (no TV or pet) so my mom braved the elements to pick me up and take me to the house. This is what it looked like driving through town:

We have big plans to watch Downton Abbey and bake something Nutella-esque (did you know it's World Nutella Day?). So this post will be a conglomeration of random things going on in my life and a delicious recipe to help you celebrate said global holiday. Enjoy. 

These paisley pants just arrived yesterday from Old Navy and I am totally in love with them. We all know about my aversion to "real" pants (like skinny jeans. I can only stand them for a few hours) so these are perfect for me. I'm stoked to style them for spring. The one downside? In this picture they look pretty pink but in real life, they're like a grayish pink so they're a bit more dull in color. But I still like them. And I bought them with a discount. Win.

I had a dream last night that my church friends threw a baby shower for me. Even though I wasn't pregnant. I'm not sure why I dreamt that. Probably because I'm in the midst of planning one for this pretty lady. P.S. I took those photos! Vanessa edited them though, that's why they look so good. I also probably dreamt about a baby shower because deep down, I really want a baby. Ish. At least twice a week I'll be lying in bed about to fall asleep and I'll say rather despondently "I want a baby". And then Husband asks why and I say "They're cute, and I like the clothes you get to wear with a cute bump". He then reminds me that those really aren't valid enough reasons and that I should probably get my degree first. And he's right. So there we are. 

Speaking of degrees, I'm considering starting a new program in the fall that allows you to graduate with a Bachelor's and Master's in Human Resource Management in 4.5 years. Best part? You only pay one semester of grad school tuition. We'll see how that goes. 

Speaking of bachelors, Husband & I have been watching Juan Pablo. We really like him so we were happy to see that they made him the next bachelor. So far we only like 2 or 3 of the girls. Sharleen, Andi, and someone else I can't remember her name. We really would like to see Nikki & Clare go. I find them catty and annoying. Especially Clare. She's basically stalking Juan Pablo. But then again if I was on that show vying for the love of Husband, I would be ruthless and forward too. In fact, I was. But hey, it worked. 

I loooooooove Veranda magazine. This table scape really caught my eye. It's so springy and romantic! When Husband & I got married, we received some beautiful antique china with a pretty floral pattern on it and it has inspired me to throw a tea party once our state has thawed a bit. Which probably won't be until mid-May. Anyway so I have big plans to set up a gorgeous outdoor table with our china and have everyone come in springy dresses and hats. And we will eat finger sandwiches and the like. It's going to be great. 

And now for a Nutella dessert recipe! If you've seen my Instagram lately, you will likely have seen my posts about Molly's Cupcakes in Chicago. They make the most heavenly Nutella peanut butter deliciousness I have ever had. I've scoured the internet searching for a copycat recipe to try today, and here's what I've got. 

Peanut Butter Cakes:
6 tablespoons butter, softened
¾ cup creamy peanut butter
1 cup brown sugar
¼ cup sugar
3 eggs
2 ¼ cup flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup sour cream
¼ cup milk
1 teaspoon vanilla

Nutella Buttercream:

¾ cup Nutella
¼ cup butter, softened
4 oz cream cheese, softened
2-3 cups powdered sugar
¼ cup unsweetened cocoa
1 teaspoon vanilla
3-4 tablespoons milk


1.     Preheat oven to 350 degrees and line pans with cupcake liners (yields 20).
2.    Beat butter, peanut butter, brown sugar and sugar until light and fluffy.  Make sure to scrape down bowl to fully mix.
3.    On
low, add eggs one at a time until fully incorporated.
4.    In a separate bowl, combine flour, baking powder, baking soda and salt.
5.    Add half the dry ingredients to the butter mixture, let fully mix in.
6.   Add sour cream, milk and vanilla.
7.    Add the remaining dry ingredients.  Be careful not to over mix.
8.   Fill liners ¾ full and bake for 18-23 minutes or until an inserted knife comes out clean.
9.   Nutella Buttercream: Beat Nutella, butter, and cream cheese for several minutes.  Add powdered sugar, cocoa, vanilla and milk.  Adjust consistency with powdered sugar and milk.
10. Pipe onto cooled cupcakes and dust with cocoa powder.
